Please someone help me! My mother used to make a Pineapple Coconut Cake and I don't remember how she used to make it. I remember that she used to strain the pineapple juice into a cast iron skiller and boil it with sugar. She would then add this to egg whites that had been beaten to a stiff peak. Into this mixture was added the drained pineapple. The icing was then used to frost a three layer yellow cake with coconut sprinkled on each layer.
My mother has passed on, and no one in the family remembers how she made the cake or the ingredients. If anyone has this, I would be eternally grateful.
