Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Cup Milk -- 1 1/2 Vanilla Beans 1/4 Cup Sugar 3 Egg Yolks 1 Tablespoon Cornstarch 1 Tablespoon Rice Flour 1 Tablespoon Butter
Scald milk and sugar with vanilla bean, beat egg yolks with cornstarch and flour. Temper egg yolk mixture with hot milk. While stirring with a wisk pour in tempered yolks. Continue cooking just until thickening starts. Remove from heat stir in butter pour through strainer. cover with plastic wrap and chill.
