1 pkg yeast
1/4 cup water
1/2 cup hot mashed potatoes
1/4 cup shortening
1/4 cup sugar
1-1/2 tsp salt
1 cup milk- scalded
1 egg
4 to 4-1/2 cups sifted all purpose flour

Soften yeast in warm water. Combine potatoes, shortening, sugar, salt and hot milk. Cool to lukewarm.
Add softened yeast and egg. Stir in 2 cups flour and beat well. Stir in remaining flour (or enough of it to make a soft dough)
Knead on floured surface till smooth and elastic (about 6-8 min)
Place in lightly greased bowl. Cover and let double (about 1 hour)
Punch down. Shape into a ball. Cover and let rest for 10 minutes. Shape into rolls: place on greased cookie sheet. Let rise till doubled (about 1 hour)
Bake in hot oven (400 degrees) about 10-12 min
Makes about 2 doz rolls.
