Fifty million Frenchmen can't be wrong but it it hard to get an two of them to agree on the exact formula for this classic pastry. In some regions galette is almost like a Kuchen dough. Perhaps the most famous is Galette des Rois, served on Twelfth Night. Regardless of the material used, the "Kings Galette" has a dried bean baked in it, which is expected to bring good fortune to the guest who gets the lucky slice.
