The show is on Sat. afternoons on PBS here in the Twin Cities. A few weeks ago he was making Bread Crumb Bread and I found that interesting, so, I put a tape in a recorded it. I have not had time to try it yet. Bread Crumb Bread Mix together and let cool to lukewarm: 1 c dry bread crumbs 2 c hot water 3 T butter 2 t salt 1/3 c molasses Proof in a little warm water then add: 2 pkg dry yeast Add and mix throughly: 1 c whole wheat flour 1 T vital wheat gluten 4 1/2 - 5 c bread flour Hand knead 6-8 minutes. It will start out a little sticky, but, you do not want to add any more flour then necessary. ( too much flour will make the bread tough) Put a little oil in a large bowl role dough to cover with oil then cover with a toweland let rise until double. Punch down, shape and let rise again. Bake at 375 for 35-45 mins. Makes 1 loaf.
