Couple of business friends came from taiwan today and i made these to serve with freshly brewed coffee! Just the right thing! =====================================================Chocolate & Cheesecake Muffins From Chamaine Solomon’s Family Recipes, This recipe belongs to her daughter, Dabrah. Great with a mug of fresly brewed coffee!
250 g plain flour 2 T. cocoa powder 1 T +1 t. baking powder 1/2 C soft brown sugar 1/2 C. castor sugar 75g butter 100g dark chocolate 3/4 milk 2 eggs
Topping: 250g cream chesse (Sorry! NO Low-FAT version will do!) 1/3 C. castor sugar 1 egg 1/2 t. finely grated lemon zest 1 t. natural vanilla essence
Preheat oven to 35F/180C. Line the standard muffin tine with paper cups. Make topping: Beat cheese, sugar, egg until very smooth. Add lemon zest & vanilla. Set aside. Make muffins: Sift flour, cocoa & baking powder together. Stir in sugar. Melt butter & chocolate, Stir smooth. Stir in milk slowly, then whisk in eggs. Pour liquid into dry ingredients. Batter should be lumpy. Fill muffin tins to 2/3 full. Top with cheese topping. Bake for 20 min or until done.
