Burgers and Fries (cookies) From: Quick Cooking, 1998
Cookie Burgers
Dough: 1 pkg (22.3 ounce) golden sugar cookie mix 2 eggs 1/3 cup vegetable oil 1 tsp water 1 pkg (10 ounces) peanut butter chips, chopped Topping: 3/4 cup flaked coconut 5-6 drops green food coloring
Filling: 1/2 cup margarine or butter, softened 2 2/3 cups confectioner's sugar 1/2 cup baking cocoa 1/4 cup milk 1 tsp vanilla
In a large bowl, combine cookie mix, eggs, oil, and water; mix well. Stir in peanut butter chips. Shape into 1 1/4 inch balls; place 2 inches apart on ungreased baking sheets. Bake at 375 for 9-11 minutes or until lightly browned. Remove to wire racks to cool. Toss coconut and food coloring until coated; set aside. In a mixing bowl, cream butter. Add sugar, cocoa, milk, and vanilla; beat until smooth. Frost the bottoms of 22 cookies; sprinkle with coconut. Top with remaining cookies and gently squeeze together. Yield: 22 burgers Note: you may substitute your favorite sugar cookie recipe and add the chips.
Peanutty Fries
1 pkg (10 ounces) peanut butter chips 1 cup sweetened condensed milk paper muffin cup liners (2 1/2 inch diameter) red icing, optional
In a microwave or double boiler, melt peanut butter chips with milk; stir until smooth. Pour into a 9 inch baking pan lined with foil and greased. Cool completely at room temperature. Lift out of the pan and invert onto a cutting board. Remove foil; cut into 3 inch by 1/4 inch strips. Fold muffin cup liners in half, pressing out creases; fold in half again. Fold point under; use as holders for fries. Use icing for ketchup if desired. Yield: about 3 1/2 dozen |
