We made these at work yesterday they were delicious.
And just as a foot note I increased the recipe 21 times with good result. This yielded over 300 4 ounce muffins
To help get things rolling more quickly in the morning I mixed all the liquid ingredients together covered and refrigerated,sifted the drys ingredients together and covered then, and diced and left the canned peaches draining in a sieve overnight in the fridge.
In the morning I put the liquid back on the machine added the flour mixture and then the peaches. The results were fine. I'm sure you could do this with smaller batches also. Happy baking.
