I have a recipe for Sable cookies but they are not filled cookies.
I will contact my friend in Australia tomorrow at work adn see if she has ever heard of these or can advise where to get the recipe.
If you want my recipe-
1-1/4 c flour
1/4 c sugar
1/2 c finely ground almonds
1 lemon peel- finely grated
1/3 c butter softened
2 egg yolks
sifted powdered sugar
pinch of salt

Grease sheets with butter. Stir flour, salt and sugar in bowl. Mix in almonds and lemon peel. Cut in butter trill resembles fine bread crumbs. Add egg yolks to make a soft dough. Roll on floured surface to 1/8 in thick. Cut rectangles from dough. Place on prepared sheets. Refrigerate 30 min. Preheat oven to 350 degrees.
bake about 15 min till light brown. Remove to racks to cool. SPrinkle lighly with powdered sugar.

(Can also cut with pastry wheel or cutters if so desire.)
