One for the microwave and the other regular.

MICROWAVE PECAN BRITTLE

1 c. pecans
1 c. sugar
1/2 c. white corn syrup
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda
1/8 tsp. salt

Stir pecans, sugar and salt; add syrup in 1 1/2 quart
glass bowl. Microwave on High 7 to 8 minutes; stir well after
4 minutes. At end of 8 minutes, add butter and vanilla.
Blend well. Return to microwave and cook on High 1 or 2
minutes more. Remove from oven and add baking soda. Stir
until light and foamy. Pour immediately on greased cookie
sheet. Cool 30 to 60 minutes. Break into pieces and store in
airtight container. Can substitute cashews, walnuts or peanuts
for pecans.Peanut Brittle

2 cups white sugar
1/4 cup water
1 1/2 cups white Karo syrup
2 cup dry roasted peanuts
2 1/2 cups peanut butter (creamy) very
important ingredient)
1/2 tsp. vanilla
1 1/2 tsp baking soda

Boil sugar, water, syrup to 296 degrees. Mix
peanuts, peanut butter and vanilla, stir into
hot syrup. Add soda mixed with a small amount
of water. Fold soda into candy mixture until
well mixed. Spread very thin onto a buttered
cookie sheet. When cool break into pieces
