What kind of cake does your hubby like? By easy, do you mean "easy from scratch" or are you open to starting with a cake mix and doctoring it up a bit? Is a 13 x 9" or bundt pan okay or do you prefer a layer cake? A couple of our family favorites start with a boxed mix enhanced by "doctoring". My hubby's favorite is my Moist 'n Creamy Coconut Cake made in a 13 x 9 pan; mine is the Supreme Sour Cream Chocolate Chip Cake made in a bundt pan; one grandson's is a Fresh Orange Cake made in a bundt (still starting with a boxed mix but you add OJ and orange zest). I'll be glad to post if they sound okay. But Nan/SC, Verla, Pat-PA, Gina/FL, Debbie D./AL and many others all have great cakes posted here in the archives - both scratch & starting with boxed mixes.
