Hi Shar,

This looks like the one! I've also included a chocolate chip version you might enjoy. I haven't tried either recipe myself.

Imperial Margarine Cookies

2 sticks Imperial Margarine
1 1/2 cups flour
3/4 c. sugar
1 tsp. baking soda
1 tsp. vinegar (see note)

Beat ingredients together 15 minutes on medium speed. (This is a must to ensure light, airy cookies.)

Drop by teaspoon onto ungreased cookie sheet. Bake at 325 degrees for 10-15 minutes or until slightly tan.

Note: I saw another recipe that added the vinegar after beating together the other ingredients.

Chocolate Chip Imperial Cookies

2 sticks margarine
3/4 c. white sugar
2 tsp. vanilla
1/2 tsp. vinegar
1 1/2 c. flour
1/2 tsp. baking soda
12 oz. bag chocolate chips
1 c. chopped walnuts

Mix above ingredients and drop by teaspoon on greased cookie sheet. Do not flatten. Bake for 15 minutes at 325 degrees.

Happy Baking,

Betsy
