I'm so glad Cathy asked for the coconut cream pie. I was going to - I love to bake but normally don't do pies because of the crust (everyone says it's easy but...). My DH loves coconut cream pie so I'd like to surprise him with one for our anniversary later this month. Thanks in advance! If not too much trouble, please post your crust recipe too. My trouble is in the rolling, sticking to the pin, etc.
