I agree, scratch is much better. Tyr this one if you have some nice apples.

Jenny's Apple Bread - 1 loaf

1 1/2 cups flour
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp nutmeg
1 cup sugar
1 cup shredded apple (use a grater)
1/4 cup oil
1 egg
1/4 tsp lemon zest (or 1/8 tsp lemon extract)
1/2 cup chopped nuts

Combine flour, cinnamon, baking soda, salt, baking powder, and nutmeg. In a larger bowl, combine sugar, apple, oil, egg, and lemon; mix well. Stir in the flour mixture just till combined. Stir in the nuts.
Pour batter into a GREASED 8x4x2" loaf pan. Bake at 350 for 55 - 60 minutes, or until it tests done. Turn it out of the pan and cool thoroughly.
If possible, wrap and store overnight before slicing.
