i had similar problem before and i could help you. (banana bread should also be moist not dry, by the way.)

1. not enought liquid in teh recipe. milk, cream, and yoghurt make muffin/quick bread moist. muffins are like scones, but with more liquid.

2. oven too hot. sometimes a muffin recipe tells you that you will need a hot oven. but in fact, most muffins (at least all the ones i am making) are baked at 375F, not like some suggested 400F or +. or your oven itself is too hot so get an oven themometer.

3. fill any empty muffin holes with water coz muffins like to be "steamed". it really works.

4. fold in dry ingredients very "lightly" or the result will be tough muffins.

there many tried muffin recipes here on tkl and i suggest you to try them out. i have done so.
