I make danish alot- a danish braid (or you can make individual ones) The recipe is from "Baking with Julia" and uses packaged yeast and water to start. If you would like the recipe I will be glad to post it.
I have never had a problem with it. The pastry puffs in the refrigerator before rolling and again when baked.
