Hi Sandi!
I saw your wish for chewy cookies. I don't know if you have your heart set on chocolate chip; but I make this oatmeal-raisin recipe all the time, and I can guarantee it's chewy. You certainly could add chocolate chips if you like.

CHEWY OATMEAL COOKIES
1 cup sifted flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cup butter-flavor shortening
1 1/3 cups brown sugar
2 eggs
1 teaspoon vanilla
2 cups uncooked quick-cooking or old-fashion oats
1 cup raisins
Chopped nuts, optional

Sift first 5 ingredients into a large mixer bowl. Add the next 4 ingredients and beat about 2 minutes till smooth. Stir in the oats, raisins, and nuts till well mixed. Drop by heaping teaspoonsful onto lightly greased baking sheets. Bake at 350° for 12-15 minutes. Makes about 5 dozen

Be sure not to undermeasure the oats or the cookies will turn out flat (although they'll still be chewy!).
