I saw your wish for a chewy cookie, and unless your heart is set on chocolate chip, this is the recipe for you. I make these all the time, and I can guarantee it is a chewy cookie. (You could always add some chocolate chips if you like.) Be sure not to undermeasure the oats or the cookies will turn out flat; but they'll be chewy nonetheless.1 cup sifted flour
3/4 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
3/4 cup butter-flavor shortening
1 1/3 cups brown sugar
2 eggs
1 tsp. vanilla
2 cups uncooked oats, quick-cooking or old fashioned
1 cup raisins (a mix of dark and light is good)
1/2 cup chopped walnuts, optional

Sift dry ingredients into a mixer bowl. Add next 4 ingredients; beat about 2 minutes until smooth. Stir in oats, raisins, and nuts. Drop by heaping teaspoonsful onto lightly greased cookie sheets. Bake at 350° 12-15 minutes. Makes 5 dozen
