Dark Chocolate Truffles
8 oz. melted semi sweet chocolate 2/3 cup heavy cream 3 TBSP. softened butter 1/2 tsp. vanilla
* Pour cream into blender or food processer. While running, slowly pour melted chocolate in. When thoroughly mixed, add butter and vanilla. Process 1 minute. Stir down and process 1 minute longer. Pour into bowl and chill at least 12 hours. With rubber gloves on, quickly roll into small balls and freeze. Remove only a few at a time from freezer to dip into melted chocolate. You can also just roll these in either chopped nuts or cocoa instead of dipping. Good luck, I hope this works for you!
