Springerle

Puffy, licorice flavored "woodcut" cookies

2 eggs
1 c. sugar
2 1/4 c. flour
Anise seed

Beat eggs and sugar about 5 min. or until thick and lemon colored. Mix in flour. If dough is dry, stir 3 Tbl. milk, 1 Tbl. at a time, into mixture. Cover; chill at least 2 hours.

Roll dough1/8 inch thick on lightly floured, cloth covered board. Press well-floured springerle form over dough to emboss designs. Cut out cookies and place on lightly floured board sprinkled with anise seed; let dry at least 10 hours.

Heat oven to 325 degrees F. Place cookies 1/2 inch apart on ungreased cookie sheet. Bake 12 to 15 minutes or until light brown. I mmediately remove from cookie sheet.

About 8 dozen cookies

If you don't like anise flavor, it seems to me that you could just eliminate the anise seeds.
