Hi Elly -- hope you're making some great loaves by now! I read the messages - Terre gave some good info and good sites.
I go to the King Arthur site often - and I would recommend the French Style Country Bread; Italian Bread 101, Tuscan bread and Food Processor French Bread. - there are others there I like ... but I got the impression that you wanted more 'basic white' - but with good crust, etc.
One that I used to make often is from their 'Baking Sheet' - Sept Oct 1997 - and it is called Crusty Italian Bread .. you make a sponge -and let it sit several hours or overnight .. and then just add the rest of ingred. Can mix on manual/dough in ABM or in mixer. It is so much like several of the ones listed above that I'm not going to type it all up.
Don't know if you can get King Arthur Flour in your area - but I often buy their 'white wheat' - some of our stores carry that - and others just carry all purpose and bread machine. However, I like using part of the white wheat in my 'country' type loaves... of course, I'm always adding things like semolina flour (when we lived in NJ we bought crusty semolina Italian loaves ... yellow looking inside and softer but still chewy - yum!) and I'm now big on flax seed - grind a bit and use it in place of about 1/3 cup of flour .. and so on. Trying to make us more healthy! If you have a large food processor it is great for making breads ...except youhave to be more aware of temperture .. there is a good book on this - THE BESTBREADEVER -Charles Van Over. If your library has this - you might want to check it out. If I'm just making a loaf or so I usual do the dough in the ABm - on manual/dough. Easier to clean than the KA or food processor and its in the machine for 2 rises ..(1-1/2 hr or so)- My 2nd ABM (I wore the 1st one out) is just an inexpensive one as I seldom use it for baking.
Otherwise I use the Cusinart more than the heavy duty Kitchen Aid ....its probably what you get used to. First few times I used the food processor I didn't pay too much attention -- about items having to be COLD etc...but then I followed directions .. and its a breeze!
