Here is a recipe I use with my baking stone- its great- my son wants me to go into the business- ha ha
1 tbls (1 packet) active dry yeast 7 ox lukewarm water (3/4 cup + 2 tbls) 2-3/4 c all purpose flour (+ 1/2 cup for kneading) 1 tsp salt 1 tbls olive oil
Disolve Yeast in water in a small bowl - let it stand for about 5-10 minutes till thin layer of foam covers the surface. Stir flour and salt together in a large bowl. Pour yeast over mixture and stir with a fork till all of the flour combined and dough starts to come together. Turn out on a lightly floured board- knead with the heel of your hand till dough is smooth and elastic - about 10 min.
Oil a bowl with the olive oil and place the kneaded dough into bowl and cover with plastic. Keep at room temp till doubled in size )about 1-1/2 hours)
Put dough on floured countertop or board nd knead a couple of times. Place dough on a cornmeal dusted peel and shape with hands or rolling pin. Spread sauce and top with your favorites.
Put pizza from peel to stone**** Bake about 20 min till crust golden. (oven at 450) but I use 425 and check at 18 min.
**** stone must be put into oven when first turning on to get hot.
The stone works great and was a great investment- I use it for bread and rolls too!! They are not that expensive and my family like the taste better.
