I don't think this is what you're after since you said dry nonsuch oatmeal but I copied it since the subject says cookies using mincemeat. Sorry I am not that familiar with mincemeat (other than remembering my grandmother's pies). I was searching for something else, saw these and remembered your post.
Mince Oatmeal Cookies Servings: Makes about 5 dozen Ingredients Instructions 3 cups quick-cooking oats 1-1/2 cups firmly packed light brown sugar 1-1/2 cups unsifted flour 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup vegetable oil 3 eggs, beaten 3 tablespoons water 1 (9 ounce) package None Such® Condensed Mincemeat, crumbled
Preheat oven to 350 deg. In large bowl, combine dry ingredients. Add oil, eggs and water. Mix well. Stir in mincemeat. Drop by rounded teaspoonfuls, 2 inches apart, onto well-greased baking sheets. Bake 8 to 10 minutes or until lightly browned. Immediately remove from baking sheets. Cool. Fruited Oatmeal Bars Prep Time: 20 minutes Servings: Makes 36 bars Ingredients Instructions 2-1/4 cups unsifted all-purpose flour 1-1/2 cups quick-cooking rolled oats 1-1/4 cups packed brown sugar 1/2 teaspoon baking soda 1 cup (2 sticks) cold butter or margarine 1/2 cup chopped walnuts 1 (9 ounce) package None Such® Condensed Mincemeat 1 (14 ounce) can Eagle® Brand Sweetened Condensed Milk (NOT evaporated milk)
Preheat oven to 350 deg. In large mixing bowl, combine flour, oats, brown sugar and baking soda. Cut in butter or margarine until crumbly. Remove 3/4 cup of crumb mixture. Stir in nuts and set aside. Firmly press remaining crumb mixture into 13x9-inch baking pan. Crumble mincemeat into medium-sized saucepan. Stir in sweetened condensed milk. Cook and stir over medium-low heat until thickened, about 5 minutes. Remove from heat. Drop by small spoonfuls atop crust in pan. Spread carefully to cover crust. Sprinkle with reserved crumb-nut mixture. Press down lightly with back of spoon. Bake 40 minutes or until top is golden. Cool on wire rack. Store covered in refrigerator. Cut into bars.
