Ukrainian Cheesecake Bars: This is a very good cheesecake.
CRUST:
3 cups all-purpose flour 4 teaspoons baking powder 1/2 cup soft butter 1 cup sugar 2 teaspoons lemon flavour 4 eggs
FILLING:
6 eggs yolks,well beaten. 4 pounds cheese (2 pounds cream cheese, 2 pounds ricotta cheese or pressed cottage cheese, or a combination of all three cheeses to make 4 pounds. Rub them through a sieve or put them all in a food processor till smooth.
2 2/3 cups sugar grated rind of 1 or 2 lemons 2/3 cups of potato starch OR 2 packages of Oetker vanilla pudding 1 or 2 cups raisins (optional) 6 egg whites, beaten till stiff.
FOR THE CRUST:
Sift flour, baking powder, and sugar, cut butter into the flour, add lemon flavour and whole eggs. Blend all, and pat into 9 by 13 inch greased parchment lined greased pan.
FILLING:
Add the egg yolks with the blended cheese, add sugar, lemon rind, potato starch or pudding powder, and raisins, blend well. Fold in stiffly beaten egg whites.
Pour filling on top of crust. Bake 350 degrees F. for 90 minutes or until top is light brown. Cut into bars.
