Hello,
Hopefully someone will have the exact recipe you're looking for. Here's the closest recipe I could find using 2 cups of coffee.
Eggless Chocolate Cake (with 2 cups of coffee) Source: Cookbook USA
3 cups all purpose flour, less 3 tbsp. 2 cups sugar 2 tsp. soda 1 tsp. salt 1/2 cup cocoa 2 cups cold coffee 1 cup vegetable or corn oil 2 tbsp. vinegar 1 tbsp. vanilla
Sift together flour, sugar, soda, salt, and cocoa. Add coffee, oil, vinegar, and vanilla and beat until smooth using an electric mixer. Bake in greased and floured 9 x 13 pan at 350 degrees for 40 minutes or until tests done. As soon as cake is out of oven, cover it with the following icing.
CHOCOLATE ICING
1/3 cup soft margarine or butter 3 cups sifted powdered sugar 3 squares unsweetened chocolate, melted 3 tbsp. cream or evaporated milk, or plain milk 1 1/2 tsp. vanilla
Mix margarine and sifted powdered sugar until smooth. Stir in melted chocolate cream or milk and vanilla, adding a bit more milk if necessary. You could substitute cocoa for chocolate if needed.
Happy Baking!
