This pie is so yummy!It was the winner of Emeril Lagasse's apple pie contest on Good Morning America.I made it for Thanksgiving & it disappeared quickly.Everyone loved it!Congratulations to winner Marsha Brooks of Carmel,Ind.she deserves it!Crunchy Caramel Apple Pie:Ingredients: 1 pastry for a deep dish 9 inch pie(homemade or store bought) 1/2 c.sugar 3 Tbls.all-purpose flour 1 tsp.ground cinnamon 1/8 tsp.salt 6 c.thinly sliced, peeled apples.(You may need more if your family sits by the bowl & sneaks the sliced apples when you are not looking)Marsha likes to use golden delicious & fuji apples.
1 recipe crumb topping(see below)
1/2 c.chopped pecans 1/4 c.caramel topping 1 oz.of T.L.C(tender,loving care)
Ingredients for crumb topping:
1 c.packed brown sugar 1/2 c.all-purpose flour 1/2 c.quick cooking rolled oats 1/2 c.butter
Directions for crumb topping:
1.Stir together brown sugar,flour & rolled oats. 2.Cut in 1/2 c.butter till topping is like coarse crumbs.Set aside.
Directions: 1.In a large mixing bowl,stir together the sugar,flour,cinnamon & salt. 2.Add apple slices & gently toss till coated. 3.Transfer apple mixture to the pie shell(She removes the store bought pie shell from the aluminum pie plate & tranfers it to a pie plate of her own.) 4.Sprinkle crumb topping over apple mixture. 5.Place pie on a cookie sheet so the drippings dont spill into oven. 6.Cover edges of pie with aluminum foil. 7.Bake in a preheated oven 375 degrees for 25 minutes.Then remove foil & put back in for another 25-30 minutes without foil. 8.Remove from oven.Sprinkle pie with chopped pecans then drizzle with caramel on top. 9.Cool on a wire rack & enjoy warm or at room temperature.
