Thank you for your help with the recipes but unfortunately our instructor will not allow any student to change the recipe once submitted. I will ask him if I can use your Wheat/Gluten Free Blueberry Muffins recipe instead of my Blueberry Cream Cheese Muffins maybe he will allow a change of recipes since my variable can be used on either muffin recipe.
For your information our objective is to determine if there is a significance difference in the volume, texture, flavor tenderness, moisture, calories and fiber when egg replacers are substituted for whole eggs in Blueberry Cream Cheese Muffins. So we have to cook the recipe six times using a different egg replacer in the muffin recipe, so it really won’t matter what which muffin recipe I will use to get the results. (Just as long as the OVEN COOKS PROPERLY. (Smile).)
Most of the class is using the oven for their experiments, we all thought cooking in the oven would be faster than cooking on top of the stove or microwave oven.
Do you know how to convert a regular recipe muffin recipe to a recipe for microwave cooking?
Here is the recipe:
BLUEBERRY CREAM CHEESE MUFFIN Make 12 muffins
1 3/4 C all purpose flour 1/3 C granulated sugar 1 Tbsp. baking powder 1 whole egg 3/4 C soy milk 1/3 C canola oil 1 tsp. grated lemon peel 8 oz Neufchatel cream cheese 3/4 C frozen blueberries
Spread
1 Tbsp. lemon juice 3 Tbsp. granulated sugar
Preparation:
1. Pre-heat oven to 400 F or 204 C.
2. Mix flour, 1/3 cup sugar, and baking powder in large bowl.
3. Beat egg in small bowl; add milk, oil and lemon peel.
4. Add liquid ingredients to flour mixture, mixing just until moistened.
5. Fold in cream cheese and blueberries.
6. Spoon into greased muffin pan, filling each cup 2/3 full.
7. Bake 20 minutes or until lightly browned.
8. Mix juice and 3 tablespoons sugar. Brush on muffins.
9. Cool for 5 minutes and take out of muffin pan and allow cooling on wired rack.
So I got to run and work on my Abstract base on Sugars or Starch or Fiber from a scientific food journal due this week. I will check in Monday.
