Date Cookies Makes 35-40 cookies
Use good quality butter to get that lovely texture and buttery aroma. And as for the dates, I found the best are from Dubai.
190 g butter 180 g caster sugar 180 g dates deseeds removed and cut into 1/2 square pieces 1 tbsp double cream 2 tsp vanilla essence 2 small eggs 250 g self-raising flour 50 g rice flour 1/4 tsp soda bicarbonate
Method: Baking 1. Cream butter, sugar and vanilla essence together until it becomes fluffy. Add in egg one at a time then add in the double cream.
2. Sieve flour, rice flour and soda bicarbonate together. Mix in the dates into the sieved flour mixture. Then using a wooden spoon, mix flour mixture into the butter mixture.
3. Using a teaspoon, scoop mixture into greased baking tin and bake for 15 to 20 minutes at 170C.
