as I to don't like how the bread machine cooks. I purchased a bread pan the same as the bakeries use, and only ever use the dough cycle, when completed let the dough rise in the bread pan and bake in the oven. Also, the same goes for sweet dough, I have a fantastic recipe for a current plaited loaf if you would like me to post. Good luck.
