Blueberry Coffee Cake
Very light and tender. You can use frozen or fresh berries to make this delicious coffee cake. If you can find wild blueberries that would be even better, they have more flavour.
2 cups flour 1 cup sugar 1 Tablespoon baking powder 1/4 tsp. salt 1 1/2 cups blueberries, fresh (washed and dried) or frozen 1/2 cup oil 2 eggs, beaten 1 cup milk 1 1/3 cups flaked coconut or preferred topping
Sift dry ingredients. Gently stir berries in the flour mixture. Blend oil, eggs, and milk together, then stir into flour berry mixture. Spoon into an 9 x 13 inch greased pan. Sprinkle top with coconut or sugar blended with cinnamon or whatever you like. Bake at 375 F. for about 25 minutes or until done.
