Bourbon fruit and Nut Bread with Bourbon Glaze
This is a lovely bread to give as a gift from your kitchen around the holidays. Wrapped in a starburst of cellophane and pretty red ribbons it will bring best wishes the nicest way I know.
1/2 cup butter, softened 1 cup brown sugar 1/2 cup sugar 2 eggs 1/2 cup orange juice 1/4 cup Bourbon
2 cups flour 2 teaspoons baking powder 1 teaspoon baking soda 1 cup chopped toasted pecans 1/2 cup chopped glaceed cherries 1/2 cup yellow raisins
Beat together first 6 ingredients until blended. Add the next 6 ingredients and stir until dry ingredients are just moistened. Do not overmix.
Divide batter between 4 greased and lightly floured mini-loaf foil pans (6x3x2-inches) and bake in 325 degrees F. oven for 45 to 50 minutes or until a cake tester, inserted in center, comes out clean.
Allow to cool for 15 minutes and then remove from pans and continue cooling on rack. When cool, brush tops with Orange Bourbon Glaze. Yields 4 mini-loaves.
ORANGE BOURBON GLAZE:
1 tablespoon orange juice 1 teaspoon Bourbon 3/4 cup sifted powdered sugar 3 tablespoons chopped toasted pecans
Stir together all the ingredients until blended.
