Salami and Peppercorn Bread
I make this bread about once a week. (i'm a salami nut!) I also like to change recipes around,sometimes it works, other times the dogs get a treat! I'll give this one as how it appeared in my cook book, then how I changed it. It's Very good, tastes better warm or hot.
1 scant cup water 3 cups white flour 1/2 cup grates cheddar cheese 1/2 tsp salt 1 tsp sugar 1 tsp yeast 1tsp black peppercorns 2 oz salami (chopped) milk for brushing
add ingredients as per your machine. water, oil, flour, half the cheese, salt, sugar, yeast. Set on dough or pizza setting. lightly oil baking sheet.Once dough cycle is done, knock it back a bit and place on a lightly floured surface, add pepper corns and salami, gently knead together. Shape into a round loaf, place on baking sheet and cover with an oiled bowl for 30 minutes. Preheat oven to 400 degrees. Uncover brush with milk and sprinle remaining cheese. Bake 30-35 minutes or until golden. Then cool.
What I changed...
I use... bread flour regular pepper italian cheese instead of cheddar, the whole 1/2 cup. I do not sprinkle any on top. add 2 tsp extra water.
