Yes,Scott, humidity does play an important part in preparation of yeast bread. Because of your high humidity there, I suspect that you will have to add a great deal more flour to get the desired result in baking yeast bread. When our weather here is high in humidity and I am making yeast bread, I often have to add more flour than the recipe calls for. I don't know how much because I've been making bread so many years that I don't have to measure the flour like I once did. Hope this helps!
