Here it is - sorry it took me a bit to find it. This recipe did not have cranberries in it, but would be easy enough to add. I’d start with 1/2 chopped fresh cranberries or 1/2 c cranraisins. You might want to add an extra 1/4 c sugar with the fresh cranberries if you like your muffins on the sweet side.
Orange Pecan (Cranberry) Muffins
1/2 c butter or margarine softened 1 c sugar 2 eggs 1 c vanilla yogurt 2 c all purpose flour 1 tsp baking soda 3/4 cup pecans, toasted 1 tsp grated orange peel
Topping: 1/4 c orange juice 1 T sugar
In a mixing bowl, cream butter and sugar. Beat in eggs and yogurt. Combine flour and baking soda; stir into the creamed mixture just until moistened. Fold in pecans and orange peel (and cranberries). Fill paper lined muffin cups 3/4 full. Bake at 375 for 18-20 minutes until a toothpick comes out clean. Brush or spritz orange juice over hot muffins and sprinkle with sugar. Cool 5 minutes before removing to a wire rack. Make 12-15 muffins. |
