White Pound Cake
3 3/4 cups cake flour, sifted 1 1/2 tspn baking powder 1 3/4 cups butter ~ DONT use substitutes 2 cups sugar 1 1/4 cups egg whites, unbeaten (about 10-12 eggs) 1/2 tsp vanilla extract 1/4 tsp almond extract
1. Sift flour once, measure, add baking powder and sift together three times.
2. Cream butter thoroughly, add sugar gradually and cream together until light and fluffy.
3. Add egg whites, 1/4 cup at a time, beating well after each addition. Add flavoring and beat vigorously. Fold into flour mixture.
4. Turn into two loaf pans 9x5x3-inch which have been greased, lined with heavy paper and again greased.
5. Bake in slow oven (275F) 40 minutes; then increase heat slightly (325F) and bake 40 minutes.
