Since this is Strawberry season, this is a must!

Fresh Strawberry Pie

1 (9 inch) pie crust baked
3 pints strawberries
1 cup sugar (test the sweetness of your berries)
1/2 cup water
3 Tbsp. cornstarch
1 Tbsp. butter
1/4 tsp. kosher salt
whipped cream for topping

Wash and drain berries well. Remove tops. Place 2 pints of cleaned berries whole in baked pie shell.

Crush remaining berries; mix crushed berries with sugar, cornstarch, butter, salt, and water in a saucepan. Cook over medium heat stirring until thick and clear. Pour over whole berries in the pie shell. Let cool a few minutes, then refrigerate till chilled. Serve with whipped cream. This will work with other soft fruits like peaches and apricots. Be sure to peel them first.
