Roadside Potato Bread
Makes: 2 loaves

3 1/2 cups scalded milk, cooled
6 Tablespoons margarine
1/4 cup mashed potatoes
1/2 cup warm water
6 tabelspoons sugar
2 Teaspoons salt
2 Packages dry yeast
10-11 Cups flour

Scald milk, pour into large bowl, & stir in sugar, margarine, salt, & potatoes. Cool to lukewarm. Sprinkle yeast on water. Stir to dissolve. Add yeast, 4 cups of flour, mix, beat for 2 minutes at medium speed, mix in rest of flour, let rise 10-15 minutes. Knead until smooth. Rise until double, knead again, & rise again. Shape into loaves, or hamburger buns, or cinnamon rolls; rise again. Bake at 350 for 45 minutes (for loaves).
