Shirl- Talk about serendipitous! I just got a package of proscuitto from a friend that owns a sandwich shop. I will probably make your recipe this coming week. I'll be using hydroponic tomatoes and due to my nature, I will neither seed, peel, or drain them. Really looking forward to it. And I'll let you know how it goes. Thanks again, Jeff
