Key West Banana Pudding

12 large bananas
2 eggs, beaten
1/4 pound (1/2 cup) butter or margarine-melted
1/2 cup sugar
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 cup flour
2 teaspoons baking powder

Preheat the oven to 400 F. and grease well an 8 x 8 x 2-inch baking pan. Mash the bananas. Add the beaten eggs, melted butter, sugar, nutmeg and cinnamon. Mix the flour with the baking powder and stir into the banana mixture.

Bake until the mixture begins to bubble up. Then turn the oven down to 200 F. and cook until a knife inserted comes out clean. Let cool before cutting to serve. Whipped cream is awfully good with this! Serves: 8
