I Hope this isn't too late for you Nancy! This recipe came with my mini loaf pans and I love it! HINTS (from pkg.); Recipes which yield a 9x5 loaf will make about 12 mini loaves. Muffin mixes make perfect mini-loaves.
BANANA NUT BREAD (Minis)
1/3 cup butter or margarine 2/3 cup sugar 1/2 tsp. grated lemon peel (optional) 2 eggs, beaten 1 1/2 cups mashed ripe banana (about 3) 1 3/4 cups flour 2 tsp. baking powder 1/2 tsp. salt 1/2 cup coarsely chopped walnuts or pecans
Cream butter and sugar in large bowl until light and fluffy; stir in lemon peel. Stir in eggs and bananas. Combine flour, baking powder and salt. Add to banana mixture slowly: stir just until moistened. Fold in nuts. Pour scant 1/2 cup of batter into each greased mini loaf pan. Bake at 350 F for 30-35 minutes or until wooden pick inserted in center comes out clean. Yields 6-8 mini loaves. Cool on rack. Glaze as below or decorate.
BROWN SUGAR GLAZE
3 Tbs. Butter or Margarine 1/3 cup Brown Sugar 3 Tbs. Whipping Cream 1/2 tsp. vanilla Combine butter, sugar and cream in saucepan. Bring to a boil over medium heat. Let boil 1 minute. Remove from heat and stir in vanilla. Spoon or pour over cooled loaves.
