Orange Apple Cake
Topping: 1/3 cup brown sugar (packed) 3 tablespoons chopped pecans 2 tablespoons all purpose flour 1/2 teaspoon cinnamon powder 2 teaspoon butter
Cake: 2 cups peeled and chopped apples 1/2 cup raisins 1 tsp cinnamon powder 2/3 cup brown sugar (packed) 1/2 cup granulated sugar 1/3 cup oil 2 eggs 1 tbsp grated orange rind 2 tsp vanilla 2 cups all purpose flour 2 tsp baking powder 1 tsp baking soda 1/2 cup light sour cream 1/2 cup orange juice
Topping: In a small bowl, mix together brown sugar, pecans, flour and cinnamon. Blend in butter and set aside.
For the cake: In a bowl, mix together apples, raisins, 1 tbsp granulated sugar and cinnamon. Set aside. In a large bowl and with an electric mixer beat together brown sugar, granulated sugar and oil. Add the eggs, one at a time, beating well after adding each. Now you have to beat in orange rind and vanilla.
In a small bowl, mix together flour, baking powder and soda. Mix together sour cream and orange juice.
Add flour mixture and sour cream mixture alternately to egg mixture, blending it well. Stir in half of apple mixture.
Spread batter in 10-inch non-stick pan sprayed with cooking spray. Top with remaining apple mixture and sprinkle with topping.
Bake in 350 degree F for 45 - 50 minutes, or until the cake gets cooked. You can insert a tester in center and see if it comes out clean. After the cake is done,let cool on wire rack.
