Meg, not exactly what you're looking for but these are fantastic. They are shortbread like with a hidden cherry and we wouldn't have a Christmas without them!

CHERRY SURPRISE COOKIES

1 cup butter
1/4 teaspoon salt
2 teaspoons almond extract
2 egg yolks
2 cups flour
1/2 cup icing sugar
maraschino cherries

Drain the cherries very well on paper towels.

Mix all ingredients together but the cherries. Roll dough into balls about the size of small walnuts, being careful not to handle too much or the dough will become too soft. Flatten each ball and roll around a cherry to make a ball again. Place on lightly greased baking sheets. Bake at 350 for 15 min. or until golden brown.

Top with thin pink icing when cold. (I dip the tops carefully) Sometimes I then dip them again in ground nuts.
