PEANUT BUTTER COOKIES rec.food.recipes/Linda Smith/1999 My mother in Minneapolis has an old, yellow newspaper clipping containing this recipe. I believe it dates back to the 1940's. I copied it onto a 3X5 card probably 30 years ago and didn't include directions, but I always use the "usual" method of creaming the butter with the sugars and then creaming in the peanut butter and adding the vanilla and dry ingredients. The dough is rolled into balls and then "crisscrossed" with a fork to make the usual peanut butter cookie design.
It's absolutely the best peanut butter cookie recipe I've ever found (IMHO).
1/2 cup butter, softened 1/2 cup peanut butter 1/2 cup brown sugar 1/2 cup white sugar 1 egg 1/2 teaspoon vanilla 1 1/2 cups flour 1 teaspoon baking soda 1/4 teaspoon salt
Cream together butter, peanut butter, and sugars. Beat in egg and vanilla. Add combined dry ingredients; mix well. Roll into 2-inch balls. Place on greased or parchment-lined baking sheet. Flatten with a fork, making a criss-cross pattern.
Bake at 375-degrees for 12-15 minutes.
