LOW-FAT BROWN SUGAR CINNAMON POP-TARTS Makes 8
For the dough: 2 Tablespoons shortening 1/3 cup powdered sugar 3 Tablspoons low fat buttermilk 1 Tablespoon light corn syrup 1/2 teaspoon baking soda heaping 1/4 teaspoon salt scant 1/8 teaspoon baking powder 1 2/3 cups flour plus about 1/4 cup for rolling 3 Tablespoons water
For the filling 3 Tablespoons dark brown sugar 3 Tablespoons sugar 3 Tablespoons flour dash of cinnamon dash salt
1 beaten egg white
For the frosting: 1 Tablespoon dark brown sgar 4 teaspoons skim milk 1 1/4 cups powdered sugar dash of salt dash of cinnamon
In a large bowl mix shortening, powdered sugar, buttermilk, corn syrup, baking soda, salt and baking powder with an electric mixer. Add the 1 2/3 cups flour and mix with hand to combine. Add water and mix with hand to combine. Form dough into a ball and set aside.
For filling, combine all filling ingredients and whisk together, set aside.
Divide reserved dough in half. Roll one half on a floured surface, using additional flour on the rolling pin to keep dough from sticking. Roll out dough to no more than 1/16-inch thickness.Cut into four 3/8" rectangles. Brush beaten egg white over entire surface of 1/2 of each rectangle. Sprinkle a rounded 1/2 Tablespoon of filling over the brushed area, making sure to leave a margin of 1/4-inch from the edge all the way around. Fold the other side of the dough over onto the filling. Press down on the edge of the dough all the way around the the tines of a fork to seal. Poke several holes in the top with the fork. Repeat steps to fill and seal reamaining rectangles, then prepare other half of dough. Preheat oven to 350. Place tarts on a lightly greased baking tin and bake for 8-10 minutes. They should be very light brown, no more, as they will be reheated and browned in a toster before eating. Remove from oven and cool completely. For frosting mix brown sugar and milk. Microwave at 50% power for 10-20 seconds and stir until the sugar is dissolved. Add the remaining ingredients, stirring until smooth. Spread a thin layer of frosting over the top of each tart and allow to dry. Leave tarts out so they dry completely, preferably overnight. To reheat, toast in a toaster oven or toaster on the lightest setting. Watch carefully so they do not burn.
