Honey Banana Muffins Source: Sunset Inn Yosemite Guest Cabins These delicious muffins melt in your mouth when served hot from the oven. Spread them with butter or cream cheese for a rich treat, or try topping them with your favorite cream cheese icing for a healthier cup cake.
2 cups all-purpose flour 1 cup whole wheat flour 4 teaspoons baking powder 1 teaspoon salt 1 cup chopped pecans (optional) 2 eggs 3/4 cup oil 1 1/4 cups honey 1 1/2 cups very ripe mashed bananas 2 Tablespoons milk
Preheat oven to 350 degrees. Prepare muffin tins by placing a paper liner in each. Spray with vegetable cooking spray to prevent muffins from sticking to paper. Stir together all-purpose flour, wheat flour, baking powder, salt, and pecans. In a separate bowl, beat eggs and add oil, honey, bananas, and milk. Add dry mixture to liquid and stir until blended, but still somewhat lumpy. Fill prepared tins about 2/3 full. Bake for 30 to 40 minutes. Muffins should be lightly browned. Remove from tins to cool. Store in an air-tight container. Makes: about 20 muffins.
