A neighbor and I are having a garage sale this Saturday. It's a nice excuse to try some cookie recipes I have been wanting to try. I can bake to my heart's content and then share the goodies with our customers so I don't have fat grams calling to me and ending up on my thighs!!! (I was dubious about mixing the butter, sugar, eggs and vanilla all at once without first blending the butter and sugar together thoroughly, but it worked fine throwing it all in at once. The results are yummy! You don't have to remember to take the butter out of the refrigerator to soften, either, you use it chilled.)
CHOCLATE CHIP COOKIES FROM THE FOOD PROCESSOR
1 cup pecan or walnut pieces 3/4 cup granulated sugar 3/4 cup packed brown sugar 1 cup butter or margarine, chilled and cut-up 2 eggs 1 tsp. vanilla 2 1/4 cups flour 1 tsp. baking soda 12 oz. semisweet chocolate chips (2 cups)
Preheat oven to 375. With steel blade in work bowl of food processor chop nuts coarsely with several on-off pulses. Remove nuts and set aside. Add sugars, butter, eggs and vanilla to work bowl. Process till creamy. Add flour and baking soda; process just till mixed in.(some flour can remain dusting top of batter). Stir in nuts and chocolate chips. Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. Bake in 375 degree oven 8-10 minutes. Cool on cookie sheet 1 minute-this is an important step. Remove cookies to rack to finish cooling. Makes about 48.
