Claudette: I haven't had time to try this recipe it yet but I will use large eggs when I do. Good luck.
Chocolate Chip Cookies
1/2 cup Shortening (Crisco) 1/2 cup butter 2 3/4 cups Flour 1 cup packed dark brown sugar 1/2 cup sugar 2 eggs 1 tsp. vanilla 1/2 tsp. baking soda 1 (12 oz) bg semi sweet choco chips 1 C. coarsely chopped walnuts(I will use pecans)
In large mixing bowl, beat shortening and butter with mixer on high about 30 seconds or until softened and well creamed together. Add half of flour to the creamed mixture and blend at low speed until it looks like coarse meal. Add brown sugar, sugar, eggs, vanilla and baking soda. Beat on low speed until well combined, being careful not to whip too much air into the dough. Hand mix in remaining flour with a wooden spoon. Stir in chocolate pieces and nuts. Drop dough by rounded tablespoons 2-inches apart on ungreased cookie sheets. Bake in a 375 degree oven for 8-11 minutes or until edges are lightly browned. Remove from oven and cool in pan for 3 minutes then remove to wire racks.
