I brought my ripe bananas to my Mom's to bake banana bread when I came to visit and found she had some herself, so now one loaf (with pecans) is cooling while another without nuts bakes. Thought I would post the recipe, it makes a loaf with consistent color throughout and lighter in density than other recipes I have used.
FOOD PROCESSOR OR BLENDER BANANA BREAD
3 eggs 1/2 cup oil 3/4 cup sugar 3 very ripe bananas, peeled 1 3/4 cup sifted flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup chopped nuts (optional)
Preheat oven to 325 degrees F. In food processor or blender, mix eggs, oil and sugar. While processing, add bananas, one at a time. Continue processing until smooth. Sift together dry ingredients. Slowly add to egg mixture, continuing to process until you have a smooth, thick batter. Mix in nuts, if using. Pour into greased bread pan. Bake 1 hour, till crust is brown. Test with a toothpick, bread is done when pick comes out clean.
