Batter Rolls
3 1/4 cups all purpose flour 1 package active dry yeast 1 1/4 cups milk 1/2 cup shortening 1/4 cup sugar 1 teaspoon salt 1 egg Milk 1 tablespoon poppy seed or sesame seed (optional)
In mixer bowl combine 2 cups of the flour and the yeast and set aside.
Heat milk, shortening, sugar, and salt just till WARM (115 to 120 degrees F.) and shortening is ALMOST melted; stir constantly. Add to flour mixture; add egg. Beat at low speed of electric mixer for 1/2 minute, scraping bowl. Beat 3 minutes at high speed. Add remaining flour; beat at low speed about 2 minutes or till batter is smooth.
Cover; let rise in warm place till double about 1 hour. Beat down with wooden spoon. Let rest 5 minutes. Spoon into greased muffin cups, filling each half full. Cover; let rise till nearly double about 30 minutes. Brush tops lightly with milk; sprinkle with poppy or sesame seed, if desired. Bake in 375 F. oven 15 to 18 minutes. Makes 18 rolls.
You may use this recipe to make a loaf bread. Bake 40 to 45 minutes till bread is brown. Test with tester, if it comes out clean bread is done.
