Apple Cake with Brown Sugar Glaze
2 cups coconut 1 cup chopped pecans 1 1/2 cups white sugar 1/2 cup brown sugar 3 cups all purpose flour 2 tsp. soda 1 tsp. cinnamon 2 tsp vanilla 3 eggs 1 1/2 cups oil 3 cups chopped apples, peeled
Cream sugars and oil in large mixing bowl. Add eggs. Mix in dry ingredients. Add nuts, coconut and apples. Mix well. Bake in greased and floured tube pan for 1 1/2 hours at 300 degrees.
Cool 10 minutes and remove from pan and glaze top. Keep refrigerated. Taste is better the second day!
Glaze: 2/3 cup brown sugar 1/3 cup butter 1/2 cup half and half
Combine in medium sauce pan. Bring to a boil over medium heat while stirring. Boil 1 minute and remove from heat and allow to slightly cool. Spoon glaze over cake.
